Avocado Toast with Poached Egg and Cherry Tomatoes
Ingredients (serves 1):
• 1 slice of sourdough or whole grain bread, toasted
• ½ ripe avocado
• 1 egg
• A handful of cherry tomatoes, halved
• Olive oil
• Salt and pepper
• Optional: chilli flakes, fresh basil, or feta cheese
Instructions:
Poach the egg: Boil water in a small pot. Add a splash of vinegar. Crack the egg into a cup, then gently slide it into the simmering water. Cook for 3-4 minutes, then remove with a slotted spoon.
Prepare the toast: Mash the avocado with a fork. Add salt, pepper, and a drizzle of olive oil.
Assemble: Spread avocado on toast, top with the poached egg, cherry tomatoes, and any extras.
Serve warm, with a side of juice or coffee.
